Vegetarian Hakka Yam Abacus


Abacus Yam Ingredient:-
600g yam
100g wheat starch
200g tapioca flour
1 tsp salt
2 tbsp cooking oil
500ml boiling water

Ingredients A:-
6 Dried shitake mushrooms(soaked and shredded), 1 piece of fried firm beancurd(shredded), 50g chopped pickled radish, 2 black fungus(soaked, shredded), 50g carrot(shredded), 2 stalk small size celery(diced), 1 red chilli(chopped)

Sauce: (mix well)
1/2 tsp salt, 1/2 tsp pepper, 1 tbsp vegetarian oyster sauce, 1/2 tsp sesame oil, 2 bowls(500ml) water

Method:

1. Peel yam and cut into cubes. Steam until soft. Remove, mash until finely pasted with a fork when still hot. Add in salt. Mix well. Mix the wheat starch and tapioca flour until well combined. Pour in boiling water slowly, stir until form into cooked dough. Then combine the dough with yam paste, knead well until non-sticky. Divide the yam dough into small portions and form into abacus shapes. Cook them into boiling water until done and float on surface of boiling water. Remove rinse under cool water for a while. Drain well, then mix with a little cooking oil. Keep them aside.

2. Heat up 4 tbsp oil to stir fry beancurd, chopped pickled radish and shredded dried shitake mushrooms till fragrant. Add in shredded black fungus and shredded carrot, stir well.

3. Add in sauce mixture, bring to boil. Place in yam abacus, simmer for a while, then add the chopped celery and chopped chilli, stir-fry until the sauce is slightly dry. Best to serve hot.


Personal note:-

1. Abacus must be cooled in cold running tap water.

2. If you don't want this dish to be too hot you can substitute chilli with capsicum instead.

3. Stir fry chopped raddish and mushrooms until very fragrant. taste nicer.

4. This dish is a lot of hard work. So involve everyone in the family. The kids loves to get their hand on the dough mixture.
